Refrigerated Display Cases

Where bakery case problems usually start.

A refrigerated bakery or pastry case is a compact system: a compressor and condenser in the lower compartment or a separate condensing unit, an evaporator behind a cover inside the cabinet, a defrost timer or digital controller, and a drain. On the service calls shown below, cases that were not holding temperature had an evaporator blocked by ice, a defrost timer that had stopped turning, an overheated start component or a damaged starter, equipment that needed blowing out, or refrigerant lost through a leaking service valve. Diagnosis on these calls used gauges and a refrigerant scale, a clamp meter, a digital multimeter and a thermal camera, and on several of them running current and cabinet temperature were read as the case began cooling again. Examples include a rotating pastry case beside a sunlit storefront window with its evaporator completely iced over, a case with a slipping defrost timer and a clogged drain, and a case that would not start, with an overheated start component and overheated terminals and wiring.

When to request service

Signs your bakery case needs attention

01

The case runs warm or the controller reads high, and cakes or pastries are not holding temperature

02

Ice covers the evaporator, air stops moving through the case, or the defrost drain is clogged

03

The case will not start, keeps cycling on and off, or terminals and wiring show signs of overheating

04

Cooling falls off over time, which can point to a refrigerant leak, a low charge, or a dirty condenser

Repair scope

What we check and repair

  • Iced evaporators: thawing the coil, freeing the airflow passage and clearing a clogged defrost drain
  • Defrost timers and digital controllers: replacing a timer whose gear no longer turns, inspecting the temperature and defrost-termination sensors, and setting temperature and defrost parameters
  • Relays, starters and start components, wiring harnesses and terminals: checked with a digital multimeter, clamp meter and thermal camera, with overheated or damaged starting parts replaced
  • Refrigerant leaks: foam bubble checks at service valves, valve-core replacement or valve removal and base cleaning, and sealed metal service-valve caps
  • Refrigerant charge: R-134a added on a scale with gauges, with sight glass, current draw and cabinet temperature checked
  • Condensing section: blowing out the lower condenser compartment and reading system pressures
